Lagrimas del Valle is a new tequila designed to showcase how agave terroir. Presented in vintages from different “ranchos unicos” (single estates), this delicious agave spirit comes to us from the Rosales family, best known for Tequila Cascahuin (which has a cult following). The production process and overall profile for Lagrimas was developed in collaboration with the Rosales family, along with other agave experts in Mexico and the US, with the goal of attaining the fullest expression of the agave’s character.

Lagrimas del Valle translates to “Tears of the Valley” - evoking the tears that form both on a tasting glass from high quality agave spirits, as well as the “tears” or condensed spirits falling into the still, the transformation of agave into tequila itself.

Discover a new kind of tequila, crafted as an expression of the distinctiveness of a single estate (rancho unico) and the rich and unique flavors that are brought forth by the particularities of geographic location, including altitude, climate, and care. No year is the same. No place is the same. Thus each vintage carries with it its own “fingerprint” of flavor, taste, and experience.

Tasting Notes

The 2022 Palo Verde Plata reveals rich agave character and sweetness throughout. Notes of tropical fruits – papaya and overripe mango – balanced with robust minerality and a subtle lemongrass note on the finish.  Lingering but delicate and lightly sweet finish. Roasted agave through and through.

Production Notes

Lagrimas begins with selection of the best single ranch agave – not just based on ripeness, but also on complexity of flavor.  The agave are harvested and cooked the Cascahuin way, using an intermitten cooking method that develops deep layers of carmelized flavor.  After 4 days of intermittent roasting, the “agua miel” (honey waters) is extracted. 70% of the agaves in Lagrimas is made with agave are crushed with a roller mill, then fermented in stainless steel tanks, with the remainder crushed using a stone mill, and fermented in open air wooden tanks. 

This is then double-distilled, blended, and bottled at 46% ABV.
