St. George Absinthe Verte is a meticulously crafted spirit that combines traditional absinthe-making techniques with a uniquely Californian twist, featuring locally foraged herbs alongside the classic wormwood, fennel, and star anise. Interestingly, this absinthe was one of the first legally produced in the United States after the lifting of the 95-year ban, with St. George Spirits obtaining the first license to distill absinthe in 2007.

    This is THE Absinthe to me. It has been a staple of my home for some time, and with the small portions of absinthe typically used in cocktails, it's lasted quite a long time. I think its color and flavor profile hits right for what it is, and it's certainly helped me get others into absinthe and absinthe cocktails.

    I specifically recommend using this absinthe as part of a sazerac.

    ZING!

    There are classic absinthe cocktails such as the Hemingway, but I’m not here to talk about that. I use this absinthe in all recipes calling for a wash or whenever I want to add the delightful zing to a drink ( generally sour drinks). It has served me and my guests well and I keep coming back. For a Hemingway and other absinthe-forward drinks, you’ll have to go to Eastern Europe or have a friend who can provide.
