George Dickel Bourbon Whisky Aged 8 Years is a Whisky from the George Dickel Whisky Collection brand hailing from America.

What is George Dickel Bourbon Whisky Aged 8 Years?

George Dickel Bourbon Whisky Aged 8 Years offers a rich, complex flavor profile that showcases the best of Tennessee whiskey-making traditions. This bourbon stands out for its unique chilling process before charcoal mellowing, a technique that gives it a smoother finish compared to many of its counterparts. Interestingly, despite being labeled as a bourbon, George Dickel Bourbon is actually produced using the Lincoln County Process, which involves filtering the spirit through sugar maple charcoal before aging. This process is typically associated with Tennessee whiskey, making this bourbon a fascinating hybrid that challenges traditional categorizations in the whiskey world.

Why do we love George Dickel Bourbon Whisky Aged 8 Years?

George Dickel Bourbon Whisky Aged 8 Years stands out for its unique chill charcoal mellowing process, which filters the whiskey through sugar maple charcoal before aging, resulting in a exceptionally smooth sip. This Tennessee-style bourbon also boasts a high-rye mash bill, creating a spicier flavor profile that sets it apart from traditional Kentucky bourbons and makes it a versatile choice for classic whiskey cocktails.

How do you drink George Dickel Bourbon Whisky Aged 8 Years?

George Dickel Bourbon Whisky Aged 8 Years shines when sipped neat or with a splash of water to open up its flavors, though it also makes an excellent base for classic whiskey cocktails. Its robust character is perfect for cool autumn evenings, pairing wonderfully with hearty dishes like grilled meats, aged cheeses, or rich chocolate desserts.

Nose: Warm caramel and vanilla lead the way, followed by hints of toasted oak and baking spices. There's a subtle fruitiness reminiscent of ripe apples and dried cherries. A faint nuttiness rounds out the aroma.

Palate: Rich and full-bodied with a velvety texture. Flavors of butterscotch and toffee mingle with cinnamon and nutmeg. Notes of charred oak and leather add depth, while a touch of citrus zest provides brightness. Gentle corn sweetness underlies the experience.

Finish: Medium to long, with lingering warmth. The sweetness fades to reveal more oak tannins and a peppery spice. Hints of dark chocolate and coffee emerge, along with a subtle smokiness. The finish leaves a pleasant dryness, inviting another sip.

George Dickel Bourbon Whisky Aged 8 Years is crafted using a mash bill of 84% corn, 8% rye, and 8% malted barley, then aged for a minimum of 8 years in new, charred oak barrels. What sets this bourbon apart is its unique chilling process before filtration, where the whisky is cooled to 40°F, allowing for a smoother taste and the removal of harsh flavors without compromising the rich character developed during aging.

  • Despite its name, George Dickel Bourbon Whisky Aged 8 Years isn't technically a bourbon at all. It's a Tennessee whiskey that meets all the requirements for bourbon but undergoes an additional step called the Lincoln County Process, which involves filtering the spirit through sugar maple charcoal before aging.
  • The brand's founder, George A. Dickel, insisted on spelling "whisky" without the "e" in the Scottish style, believing his product to be as fine as Scotch whisky. This tradition continues today, making it one of the few American whiskeys to omit the "e" in its spelling.
  • George Dickel Bourbon Whisky Aged 8 Years is actually chilled before undergoing the charcoal mellowing process, a unique approach inspired by George Dickel's belief that whisky made in winter tasted smoother. This cold filtration method sets it apart from other Tennessee whiskeys and contributes to its distinctively smooth character.

      Mixing Bourbon

I picked this up on a whim, it’s nothing fancy but works well in a Julep or Boulevardier. 90 proof so it has respectable punch for a cocktail, and it made a passable old fashioned. Not my favorite bourbon, but happily used it all up in my home bar.
