In 2008, KOVAL became the first distillery to open in Chicago since the mid 1800s and has been making organic spirits from scratch since Day 1. This grain-to-glass distillery focuses on organically grown grains and local sourcing.

Production Notes

KOVAL Distillery is a grain-to-bottle distillery. They do not source their liquid, as many producers do, instead they craft everything in house using organic, local ingredients.

This rye's mashbill is made up of 51% corn and 49% millet and it is aged in 30 gallon charred virgin oak casks.  It embodies that classic KOVAL house style, using only the "heart" cut of the distillate, which results in a cleaner, brighter-tasting whiskey.

Like all KOVAL's whiskeys, their rye is single barrel so as to ensure that the flavor and pure grain notes are developed to their fullest potential. All KOVAL spirits can be traced back to their barrel and even to the organic farms that produce the raw ingredients.

Founder Facts
Owners Sonat and Robert Birnecker left academic careers to found KOVAL, Chicago’s first distillery since the mid 1800s. They imagined KOVAL as a place that exemplified a modern take on the traditional Central European distilling techniques Robert learned from his grandparents. Robert not only grew up distilling on his grandparents’ award-winning winery and distillery in Austria, he has also become a world-renowned expert on craft distilling. 
The name Koval means "blacksmith," in numerous Eastern European languages, but in Yiddish the word also refers to a "black sheep" or someone who forges their own path and does something new and out of the ordinary. The distillery's name was chosen as a tribute to both the heritage of the two owners as well as to their own ambitions.
