Hamilton Pimento Dram Liqueur

In a tall glass pour one part Pimento Dram, add three parts Hamilton 86 then fill the glass with freshly-squeezed orange juice and ice, garnish with a mint sprig if you have one. Or try it in an Ancient Mariner.

Nose: Sharp allspice dominates, followed by warm cinnamon and nutmeg. Hints of molasses and dark rum provide a sweet, earthy backdrop. Subtle notes of clove and ginger emerge with time.

Palate: Intense allspice berry flavor floods the palate, balanced by brown sugar sweetness. Baking spices like cinnamon and nutmeg add complexity. The rum base contributes a mild alcohol warmth and caramel notes. A slight peppery bite lingers underneath.

Finish: Long and warming. The allspice gradually fades, leaving behind a pleasant tingle of baking spices. Subtle sweetness from the rum base persists, with a final whisper of molasses and oak.

Like other Hamilton rums, this Pimento Dram is bottled in upstate NY, at the Five & 20 Distillery with rum imported from Jamaica. Whole pimento berries are macerated five days in 85% Jamaican light rum from the Worthy Park Estate. After maceration to bring the flavors of the pimento into the high proof rum, the mixture is coarse filtered, then diluted over five days with filtered well water. Once most of the dilution has been completed 15% sugar is added before bottling at 30% ABV in 750ml bottles.

• Hamilton Pimento Dram is actually made with allspice berries, not pimentos. The liqueur's name comes from the Jamaican term "pimento," which refers to allspice rather than the red peppers commonly associated with the word.
