Tasting Notes
Nose: At 62% ABV, this opens with surprising composure dried figs, toasted walnuts, and orange zest lead the charge, followed by a warm undercurrent of vanilla, caramel, and a whisper of stone fruit.
Palate: Rich and structured, with coconut cream and vanilla arriving first classic markers of long Bourbon cask aging.
Finish: Long and drying, with cracked black pepper, dark cocoa, and a hint of espresso.
How It's Made
Indomitas is a blend of two rums both distilled in 2010 one in a pot still, one in a Coffey column then aged separately before being married together, with one following a single 15-year ex-Bourbon maturation and the other spending 6 years in ex-Bourbon casks followed by 9 years in ex-Cognac casks, all fully tropically aged at Foursquare's Barbados distillery.
