Empress 1908 Gin is a Other Gin  crafted in England.

Empress 1908 Gin captivates with its stunning indigo hue, derived naturally from the infusion of butterfly pea flower. This color-changing gin transforms from deep blue to soft pink when mixed with tonic or citrus, offering a visually striking experience that's as delightful to watch as it is to taste.

Why We Love It

Cocktail lovers should adore Empress 1908 Gin for its stunning color-changing properties – the gin transforms from a deep indigo to soft pink when mixed with tonic or citrus. This mesmerizing effect comes from the butterfly pea blossom used in its botanical blend, which also includes unique ingredients like the Fairmont Empress tea blend and grapefruit peel, creating a smooth, balanced flavor profile unlike any other gin on the market.

How to Drink It

Empress 1908 Gin shines in simple, gin-forward cocktails that showcase its unique color and delicate botanicals, though it's equally delightful sipped neat or over ice. This versatile spirit is perfect for warm summer evenings, pairing beautifully with light seafood dishes or citrusy desserts that complement its floral notes and hint of grapefruit.

Tasting Notes

Nose: Fresh juniper and earthy notes lead, followed by hints of grapefruit peel and coriander. A subtle floral aroma reminiscent of lavender and rose petals lingers in the background.

Palate: Smooth and balanced. Juniper and citrus flavors dominate initially, giving way to warm spices like cinnamon and black tea. The butterfly pea blossom infusion adds a subtle sweetness and complexity without overpowering the classic gin botanicals.

Finish: Medium-long with a gentle warmth. Lingering notes of ginger and black pepper, accompanied by a faint floral sweetness. The finish is clean and crisp, leaving a pleasant dryness that invites another sip.

How It's Made

Empress 1908 Gin is crafted using a unique blend of eight botanicals, including the butterfly pea flower, which gives the spirit its signature indigo hue. During production, the gin is distilled in small batches using traditional copper pot stills, with the butterfly pea flower added last to preserve its delicate flavor and vibrant color-changing properties.

Fun Facts

  • Empress 1908 Gin owes its striking indigo hue to butterfly pea flower, which magically changes color when mixed with citrus or tonic. This natural pH reaction transforms your drink from blue to pink, creating a mesmerizing cocktail experience.
  • The gin's recipe was inspired by the tea served at the iconic Fairmont Empress Hotel in Victoria, Canada. It incorporates some of the same botanicals found in their signature blend, including the Empress blend tea itself.
  • Despite its vibrant color, Empress 1908 Gin is all-natural and contains no artificial flavors or colors. The butterfly pea flower not only provides the distinctive hue but also imparts a subtle earthy note that complements the gin's other botanicals.

Love this Gin. It’s a little sweeter and floral that a London dry. So if you’re looking for a more dry juniper forward gin this is not that but it’s great in fruity or floral cocktails.

    Impressed

Beautiful color and nice flavor notes through out the cocktail. Really love this in the Aviation Cocktail especially adding a deeper richer color profile to that presentation of it

Color is fun but the flavor is not

I immediately disliked this one on it's own, so I tried to work it into a number of different cocktail recipes. Perhaps I'm just no good at mixing with this one, but I'm willing to have my mind changed if there are any good ideas. At the moment I'm going to NOT recommend this one.

Instead: I would reccomend St. George Gins or The Botanist.
