Despite its recent founding, Rabbit Hole Distillery is one of the most trafficked and well-regarded stops on the Kentucky Bourbon trail. This bourbon relies heavily on tradition, but is a categorically modern expression of great American whiskey, and deserves to be considered canon. It already is at The James Beard Foundation which has named Rabbit Hole its official bourbon.
Rich, honeyed aromas of grilled corn cakes, walnut bread and a hint of mint. On the palate, full-bodied, moderately sweet and appealingly spicy, massively and dangerously quaffable. Its subtlety belies its strength, and it's a total winner. - Jack Robertiello

|Tasting Notes||Sherry with traces of caramel and cherry on the nose. A palate of raisins, currants, and cherries, hint of almond and vanilla. The finish is light with a touch of dryness.|
By industry and provenance, Rabbit Hole is steeped in bourbon traditions, but that hasn't stopped it from forging its own path. Highly innovative, the distillery uses cutting-edge production techniques to chart its course forward. Case in point: its culinary study of the grain-cooking process led to its proprietary production process, by which its careful calibration of cooking time and temperature optimizes for flavor. It ages in only toasted barrels, all of this resulting in a distinctive finished product that is much more nuanced, complex, and mature than its years young would imply.
This particular expression of Rabbit Hole was inspired by Heather, the wife of the brand's founder. Heather, a Louisville native, is the one who first introduced Kaveh to bourbon, and he's been head over heels for both Heather and bourbon ever since.
Ways to Enjoy
Classic: While we're talking Kentucky, it has to be a mint julep, in which bourbon plays the starring role.

Bought this recently as it was brought into my own bar as one of three super premium whiskeys. It is disgustingly delicious, goes down like water, and it even knocked off my old favorite Big Bottom Barlow Trail Sherry Casked as number one.
