Ransom Old Tom Gin is a Gin hailing from America.

What is Ransom Old Tom Gin?

Ransom Old Tom Gin stands out for its unique barrel-aging process, which imparts a rich, amber color and subtle oak notes to the traditional juniper-forward profile. Interestingly, the recipe for this gin was developed in collaboration with cocktail historian David Wondrich, who based it on a late 1800s recipe, making it a true revival of a classic American spirit.

Why do we love Ransom Old Tom Gin?

Cocktail enthusiasts should seek out Ransom Old Tom Gin for its distinctive flavor profile that bridges the gap between modern dry gins and sweeter genever-style spirits. This Oregon-made gin stands out for its use of malted barley in the base spirit and a brief barrel aging process, resulting in a complex, slightly sweet gin with notes of juniper, citrus, and subtle oak that shines in classic cocktails like the Martinez or Tom Collins.

How do you drink Ransom Old Tom Gin?

Ransom Old Tom Gin shines in classic gin-forward cocktails, where its malty sweetness and botanicals can take center stage, but it's also delightful sipped neat or with a single ice cube to appreciate its complexity. This versatile spirit is perfect for cozy autumn evenings, pairing wonderfully with hearty dishes like roasted game or rich, creamy cheeses that complement its robust character.

Nose: Juniper-forward with prominent notes of citrus peel and coriander. Underlying hints of malted barley and honey add warmth and complexity. A subtle woodiness from barrel aging rounds out the aroma.

Palate: Smooth and full-bodied. Initial burst of juniper and citrus, followed by warm spices like cardamom and cinnamon. The malted barley base contributes a slight sweetness, reminiscent of graham crackers. Subtle notes of dried herbs and a touch of anise emerge mid-palate.

Finish: Long and warming. The sweetness fades, leaving a pleasant dryness. Lingering notes of juniper, citrus zest, and a gentle oak character. A mild peppery spice provides a final kick, inviting the next sip.

Ransom Old Tom Gin is crafted using a unique two-step process that combines pot-distilled corn spirits with a gin base made from malted barley. After distillation, the gin is aged for 3-6 months in wine barrels, imparting a subtle golden hue and adding complexity to its flavor profile.

  • Ransom Old Tom Gin is made with a base of malted barley, making it one of the few gins in the world that could technically be classified as a whiskey if it weren't for the botanicals added during distillation.
  • The recipe for Ransom Old Tom Gin was developed in collaboration with cocktail historian David Wondrich, who used 19th-century records to recreate a historically accurate version of this once-lost style of gin.
  • Unlike most gins, Ransom Old Tom is aged for 3-6 months in wine barrels, giving it a unique golden hue and subtle tannic qualities that make it perfect for classic cocktails like the Martinez and Tom Collins.

      Curious and remarkable

Well-made product. Distinct, clean flavor with no hint of acetone in the smell or taste. No bad aftertaste; really well distilled.

I've never tasted anything exactly like this. Malty and complex with an array of citrus botanicals. To me, the flavor is closer to a mild rye whiskey or an aquavit than to a traditional gin. Imagine a Rittenhouse Rye with a much lighter mouthfeel, and juniper and citrus highlights. The Ransom Old Tom is dry, not sweet like I have been told other Old Toms are; however, its flavors and aromatics give it an impression of "sweetness." As such, it blends much better with sweet vermouth than with dry. If you're making martinis with this, I recommend a sweeter martini rather than a dry one.

I'm still looking for the perfect cocktail to show off the flavor here. I've tried it in place of London Dry in several recipes, but it doesn't seem to work for me. I actually like it better as a substitute for rye in cocktails. It's good enough to drink neat if you'd like, or lightly sweetened in an Old Tom-fashioned. I'm still not entirely sure how to use it best, but I recognize that it is really good. I definitely recommend it for the curious and adventurous.
