Plantation Australia 2009 Single Cask is a rare limited edition rum crafted at the historic Beenleigh Artisan Distillery in Queensland. Distilled exclusively in copper pot stills, this highly complex spirit undergoes an intricate double fermentation and a three stage maturation process, culminating in a distinctive finish in rare Palo Cortado sherry casks.

Tasting Notes

Nose: Bright aromas of mandarin jam, grapefruit zest, and dried apricot mix with warm notes of pistachio, black pepper, star anise, and subtle sherry.

How It's Made

This molasses based rum undergoes a highly unusual 15 day fermentation process using two distinct yeast strains: twelve days with Schizosaccharomyces pombe and three days with Saccharomyces cerevisiae. After pot still distillation, it ages for 11 years in ex bourbon barrels in the tropical Australian climate. It then travels to France for one year in French oak Ferrand Cognac casks, followed by a final four month finish in Palo Cortado sherry casks.
