Nose: Opens with deep caramelized sugar and brown butter, followed by layers of ripe fig and vanilla.
Palate: Bold at 57% ABV but surprisingly approachable. Brown sugar and caramelized pineapple lead, supported by tannins from the aged Barbadian pot still rum that add structure without overwhelming.
Finish: Medium-long with a citrus-forward character that lifts the darker caramel notes.
Probitas Green Label brings together unaged and 2-year-aged double-retort pot still rums from Jamaica's Hampden Estate and Barbados' Foursquare Distillery, along with unaged Coffey column still rum from Foursquare, then darkens the blend using caramel color made from heated sugar at Foursquare—a centuries-old West African practice that adds zero sweetness—before bottling at a bold 57% ABV entirely in the Caribbean without any added sugar or neutral spirits.
