A delicious cocktail from our friends at Liber & Co. to celebrate the launch of their latest syrup - Marion Blackberry.
This is a bright and refreshing riff on the Gin Sour. Beautiful and full of delicious complexity!
It features a lesser-known spirit that has a lot of fans, Genever.
As always, if you don't want to mess with egg white, you can use aquafaba.

Ingredients

2 oz Bols Genever
-
.75 oz Liber & Co. Marion Blackberry Syrup
-
.75 oz lemon juice
-
1 egg white
-
3 dashes Absinthe
-
Lemon twist, for garnish
Directions
Add all ingredients to your cocktail shaker and dry shake for 10 seconds.
Add ice and shake for 10-15 seconds.
Strain into a chilled coupe and garnish with a lemon twist.
