Mix, known for spotlighting Latin American flavors, transformed the famously crisp and bracing Moscow Mule into a vibrant, rum-based sip bursting with tropical freshness.
The Brooklyn Burro swaps vodka’s neutral bite for bright, fruity Saint Rhum, creating a lush and easygoing backbone for this sunny cocktail. Fiery Ginger Syrup from Liber & Co provides a spirited kick, preserving the Mule’s trademark ginger spice, but turning it warmer, deeper, and more nuanced. Fresh pineapple juice delivers sweetness and acidity while a squeeze of lime juice brings everything together with just enough tartness. Aromatic bitters add a subtle layer of complexity.

2 oz Saint Rhum, or another unaged rum
0.5 oz Liber & Co. Fiery Ginger Syrup
0.5 oz lime juice
0.5 oz pineapple juice
2 dashes Angostura Bitters
Pineapple wedge, for garnish
Add all ingredients except soda water to a cocktail shaker.
Add ice and shake hard for 10 seconds.
Strain into a goblet filled with ice.
Top with club soda.
Garnish with pineapple wedge.
