Brooklyn Burro featuring white rum, fiery ginger syrup, and bitters

Brooklyn Burro
Rated 3.8 stars by 6 users
The Brooklyn Burro brings sunny, tropical vibes to the classic Moscow Mule, trading chilly Russian winters for warmer Caribbean shores. Created by Ivy Mix—the award-winning bartender behind Leyenda, Brooklyn’s celebrated cocktail haven—this drink reflects her playful yet sophisticated style. Mix, known for spotlighting Latin American flavors, transformed the famously crisp and bracing Moscow Mule into a vibrant, rum-based sip bursting with tropical freshness.
The Brooklyn Burro swaps vodka’s neutral bite for bright, fruity Saint Rhum, creating a lush and easygoing backbone for this sunny cocktail. Fiery Ginger Syrup from Liber & Co provides a spirited kick, preserving the Mule’s trademark ginger spice, but turning it warmer, deeper, and more nuanced. Fresh pineapple juice delivers sweetness and acidity while a squeeze of lime juice brings everything together with just enough tartness. Aromatic bitters add a subtle layer of complexity.
Finished with fizzy club soda and garnished with a juicy pineapple wedge, this drink feels like a welcome escape from the Mule's traditional metal mug, perfectly suited for sipping under warm skies instead.
Though Leyenda has (sadly!) closed its doors, the Brooklyn Burro remains a delicious legacy of Ivy Mix’s creative flair, ready to whisk you away to warmer climates, no matter the season or borough you find yourself in.
