The Perfect Mojito: A Summer Classic featuring Copalli Rum from Belize
Nothing says summer like a mojito! Here we've got a recipe for one made with a delicious rum from Belize, Copalli White Rum.
Copalli is a much-awarded rum made from fresh-pressed sugar cane juice on a sustainable farm in the heart of the Belize rainforest. Not only is the rum delicious, but it's made with sustainable and socially responsibly practices, contributing to the local economy and community in an ecologically positive way.
So slice up a few limes, grab your fresh mint, and get to muddling!
Ingredients
8-10 fresh mint leaves
2 oz Copalli White Rum
.75 oz lime juice
.75 oz simple syrup (or .5 oz of raw sugar, or to taste)
1 oz soda water
a few sprigs of mint
Method
Place mint leaves in the bottom of a collins glass. Add the sugar and the lime juice, gently muddling to release oils and aroma but not going so far as to bruise the mint. Add rum and soda water and gently stir to combine. Add ice (crushed ice, ideally!) until the glass is full. Top with the mint sprigs and sip with pleasure!
