Cocchi Vermouth Di Torino is a Vermouth from the Cocchi Liqueur brand hailing from Italy.

What is Cocchi Vermouth Di Torino?

Cocchi Vermouth di Torino is a rich, complex sweet vermouth that has been produced since 1891 using the original recipe of Giulio Cocchi. What sets it apart is its use of Moscato wine as the base, which contributes a unique floral character and natural sweetness to the blend of botanicals, including cinchona bark, rhubarb, and citrus. Interestingly, Cocchi Vermouth di Torino played a role in the cocktail renaissance of the early 2000s, helping to revive interest in classic vermouth-based drinks like the Negroni and Manhattan. Its reintroduction to the U.S. market in 2011 was a pivotal moment for bartenders and cocktail enthusiasts, sparking a renewed appreciation for high-quality, artisanal vermouths.

Why do we love Cocchi Vermouth Di Torino?

Cocchi Vermouth di Torino stands out as a premium Italian vermouth that captures the essence of Piedmont's rich winemaking tradition. Its unique appeal lies in the use of Moscato wine as a base, along with a blend of local herbs and spices including wormwood, rhubarb, and citrus, resulting in a beautifully balanced sweet vermouth with notes of cocoa, citrus, and a pleasant bitterness that elevates classic cocktails like Negronis and Manhattans.

How do you drink Cocchi Vermouth Di Torino?

Cocchi Vermouth Di Torino shines when sipped chilled and neat, allowing its complex flavors to unfold on the palate, but it also excels in stirred cocktails where its rich, herbaceous profile can take center stage. This versatile vermouth is perfect for cozy autumn evenings, pairing beautifully with hearty dishes like roasted meats or aged cheeses, though it's equally at home in refreshing spritz-style drinks during warmer months.

Nose: Rich cocoa and dark cherry aromas lead, followed by hints of cinnamon and orange peel. A subtle earthiness reminiscent of forest floor and dried herbs lingers in the background.

Palate: Bittersweet chocolate and ripe red fruits dominate initially. Notes of vanilla, licorice, and a touch of coffee emerge. The sweetness is balanced by a gentle bitter edge, reminiscent of walnuts. A warm spiciness builds, bringing to mind cinnamon and nutmeg.

Finish: Long and warming with a pleasant bitterness. Dark chocolate and cherry flavors persist, accompanied by a subtle medicinal quality. A slight tannic dryness leaves the palate refreshed and ready for another sip.

Cocchi Vermouth di Torino is crafted using a base of Moscato wine, which is then infused with a proprietary blend of herbs and spices including cinchona bark, rhubarb, and citrus peels. What makes its production unique is the use of natural cochineal for coloring, a traditional method that gives the vermouth its distinctive ruby-red hue and connects it to its historical roots in the Piedmont region of Italy.

  • Cocchi Vermouth di Torino was the first vermouth to receive the official "Vermouth di Torino" geographical indication in 2017, cementing its status as a true representation of the region's historic vermouth-making tradition.
  • The recipe for Cocchi Vermouth di Torino includes a unique ingredient: Moscato wine from the Asti region, which gives it a distinctively aromatic and floral character not found in other vermouths.
  • Despite its rich history dating back to 1891, Cocchi Vermouth di Torino was unavailable in the United States until 2010. Its reintroduction played a significant role in sparking the modern vermouth renaissance and cocktail revival.

      Great Go-To Vermouth

Never liked Vermouth as every bartender used the cheapest available. Found this through Anders Erickson youtube channel and gave it a try. This works as an aperitif as well as making a great Manhattan.
