Dolin Blanc Vermouth is a Bianco Vermouth from the Dolin Vermouth brand crafted in France.

Dolin Blanc Vermouth is a lesser-known style of vermouth that bridges the gap between dry and sweet varieties, offering a unique floral and herbal profile with a subtle sweetness. Interestingly, this vermouth was originally created in the 1820s to commemorate the completion of the Pyramide du Mont-Cenis, a monumental obelisk built to honor the construction of the first paved road through the Alps.

Why We Love It

Dolin Blanc Vermouth stands out among fortified wines with its delicate, floral sweetness and lighter color compared to traditional white vermouths. This Alpine-inspired aperitif from Chambéry, France, is crafted using local herbs and flowers, resulting in a crisp, clean profile that shines in classic cocktails like the Vesper or can be savored on its own over ice.

How to Drink It

Dolin Blanc Vermouth shines when served chilled over ice with a twist of lemon, allowing its delicate floral and herbal notes to bloom, or as a key player in lighter, aperitif-style cocktails. This versatile vermouth is perfect for warm summer evenings, pairing beautifully with light seafood dishes, fresh salads, and soft cheeses, though its subtle sweetness and complexity make it a welcome addition to cocktails year-round.

Tasting Notes

Nose: Fresh and floral with prominent notes of elderflower and honeysuckle. Hints of chamomile tea, lemon zest, and a subtle vanilla sweetness emerge. There's a light herbal quality reminiscent of fresh thyme.

Palate: Smooth and medium-bodied with a gentle sweetness. Flavors of white grape, pear, and green apple are balanced by herbal notes of wormwood and coriander. A touch of white pepper adds complexity. The overall impression is crisp and refreshing.

Finish: Clean and moderately long. The sweetness fades to reveal a pleasant bitterness characteristic of quality vermouth. Lingering notes of citrus peel and alpine herbs. A subtle minerality leaves the palate feeling refreshed.

How It's Made

Dolin Blanc Vermouth is crafted in Chambéry, France, using a base of local white wines infused with a secret blend of herbs, spices, and plants from the Alpine region. What's fascinating about its production is the use of wormwood harvested from the nearby mountains, which gives the vermouth its distinctive bittersweet character and contributes to its protected geographical indication status.

Fun Facts

  • Dolin Blanc Vermouth was originally created in 1821 as a mistake when winemaker Joseph Chavasse accidentally added too much sugar to a batch of dry vermouth. The error led to the birth of this unique, sweeter style that became a hit in the Chambéry region of France.
  • Unlike most vermouths that use a red or white wine base, Dolin Blanc uses a blend of both red and white wines from the Rhône Valley. This unconventional mix contributes to its distinct flavor profile and pale golden color.
  • Dolin Blanc Vermouth holds a prestigious Appellation d'Origine Contrôlée (AOC) designation, making it the only vermouth in the world with this protected status. This certification ensures that it's produced using traditional methods and ingredients from the Chambéry area.

This is the vermouth you are looking for

I tried Dolin Blanc on the recommendation of Anders Erickson (great YouTube channel). Not because I wanted to experiment but because I was unhappy with the usual choices that forced me into an excessively dry martini regime, I enjoy Dolin in a martini and other drinks in larger proportion than I would ever consider for other dry vermouth.s
