Lustau Manzanilla Papirusa Sherry is a Sherry from the Lustau Sherry brand crafted in Spain.

Lustau Manzanilla Papirusa Sherry, aged under a veil of yeast called "flor" in the salty air of Sanlúcar de Barrameda, offers a bone-dry, crisp profile with hints of sea salt and chamomile. Interestingly, its name "Papirusa," meaning "elegant and beautiful," comes from a doll given to the daughter of Lustau's first manager in the 1940s, adding a touch of nostalgia to this refreshing coastal wine.

Why We Love It

Cocktail enthusiasts should embrace Lustau Manzanilla Papirusa Sherry for its unique, bone-dry profile and delicate sea-salt notes imparted by aging under a veil of flor yeast in the coastal town of Sanlúcar de Barrameda, offering a crisp, refreshing alternative to traditional spirits in mixed drinks.

How to Drink It

Lustau Manzanilla Papirusa Sherry is best enjoyed chilled and served neat in a small wine glass or copita, perfect for sipping on warm summer evenings or as a refreshing aperitif; it also shines in light, citrusy cocktails and pairs beautifully with seafood dishes, particularly oysters and other shellfish.

Tasting Notes

Nose: Bright and briny aromas reminiscent of sea spray and fresh ocean air. Delicate notes of chamomile tea and green apple, with hints of bread dough and almonds from the flor yeast. A subtle undercurrent of iodine adds complexity.

Palate: Bone dry and light-bodied, with a crisp, refreshing acidity. Flavors of green olive, lemon zest, and raw almond dominate. A distinct salinity evokes memories of oyster shells. Subtle yeasty notes add depth without heaviness.

Finish: Clean and mouthwatering, with lingering saline and citrus notes. A slight bitterness reminiscent of grapefruit pith appears briefly before fading to a pleasant, tangy aftertaste. The finish is medium in length, leaving the palate refreshed and eager for another sip.

How It's Made

Lustau Manzanilla Papirusa Sherry is made through biological aging under a layer of yeast called "flor" in the cool, humid, and salty air of Sanlúcar de Barrameda, a coastal town on the Guadalquivir estuary; this unique microclimate and aging process imparts distinctive briny, chamomile notes to the sherry.
