Why We Love It
Cocktail enthusiasts should embrace Novo Fogo Chameleon Cachaça for its unique dual-wood aging process, which combines the brand's signature silver cachaça with oak-aged cachaça to create a smooth, versatile spirit. Unlike most rums, this organic Brazilian cachaça is made from fresh sugarcane juice rather than molasses, resulting in a distinctively grassy, herbaceous flavor profile that shines in both classic and contemporary cocktails.
How to Drink It
Novo Fogo Chameleon Cachaça shines in tropical cocktails, where its grassy, fruity notes can take center stage, but it's also delightful sipped neat or with a large ice cube to open up its flavors. This versatile spirit is perfect for warm weather sipping and pairs beautifully with grilled meats, fresh seafood, and citrusy desserts, making it an ideal choice for outdoor gatherings and beachside dinners.

How It's Made
Novo Fogo Chameleon Cachaça is crafted from organic sugarcane grown on the distillery's own coastal rainforest estate in Brazil. After harvesting, the fresh sugarcane juice is fermented with wild yeast and then distilled in copper pot stills before being aged for one year in repurposed oak barrels, resulting in a unique spirit that balances the grassy freshness of unaged cachaça with subtle wood notes.
