Empirical Symphony 6 is a Liqueur from the Empirical Spirits Collection brand hailing from England.

What is Empirical Symphony 6?

Empirical Symphony 6 is a unique spirit that defies traditional categorization, blending elements of gin, aquavit, and eau de vie. This innovative creation combines unlikely ingredients like carrot, fig leaf, and lemon verbena to produce a complex flavor profile that's both familiar and surprisingly new. Interestingly, the distillation process for Symphony 6 involves a custom-built vacuum still that operates at lower temperatures than traditional stills, allowing for the preservation of delicate flavors that would otherwise be lost during conventional distillation methods.

Why do we love Empirical Symphony 6?

Empirical Symphony 6 isn't technically a rum, but rather a unique spirit that blends the flavors of rum with unexpected ingredients like birch wood and coffee chaff. This innovative creation from Copenhagen-based Empirical pushes the boundaries of traditional spirits, offering cocktail enthusiasts a complex, smoky-sweet profile that can add depth and intrigue to classic rum-based drinks or shine as the star of new, experimental cocktails.

How do you drink Empirical Symphony 6?

Empirical Symphony 6 shines when sipped neat or with a single large ice cube, allowing its complex flavors to unfold gradually on the palate. This versatile spirit also excels in stirred cocktails like Old Fashioneds or Manhattans, and pairs beautifully with rich, savory dishes on cool autumn evenings.

Nose: Fresh green apple and pear dominate, backed by subtle floral notes of elderflower. A hint of lemon zest adds brightness, while a touch of vanilla provides warmth.

Palate: Crisp and clean with a silky texture. Flavors of Granny Smith apple and Asian pear shine through, complemented by a gentle sweetness reminiscent of honeysuckle. Light notes of chamomile tea and a whisper of white pepper add complexity.

Finish: Medium-long and refreshing. The fruit notes fade, leaving a pleasant herbal quality with hints of lemongrass and a subtle bitter edge, similar to green tea. A faint mineral quality lingers, reminiscent of wet stones.

Empirical Symphony 6 is crafted through a unique process that combines barley koji fermentation with vacuum distillation at low temperatures. This innovative technique allows the spirit to retain delicate flavor compounds that would typically be lost during traditional distillation, resulting in a complex and nuanced flavor profile that captures the essence of its botanical ingredients.

  • Empirical Symphony 6 is made with Douglas fir needles that are foraged from the Pacific Northwest and vacuum-distilled within hours of harvest, capturing a vibrant, forest-fresh essence rarely found in spirits.
  • The spirit's unique flavor profile includes notes of yuzu, a Japanese citrus fruit, which is combined with the Douglas fir in a way that mimics the molecular structure of certain perfumes, creating an aromatic experience that evolves on the palate.
  • Symphony 6 is produced using a custom-built vacuum still that operates at room temperature, allowing for the extraction of delicate flavors that would be destroyed by traditional high-heat distillation methods, resulting in a spirit that captures flavors previously thought impossible in alcohol.
  • Main Ingredient: Dried tea leaves

      Upgraded my G&T with this

I know this is thought of as a gin, but its a bit more complex, both with zest and lemon leaves and a darker, leathery hint of coffee leaves. I had it over ice with mediterranean tonic (I wouldn't recommend normal tonic), it requires some power in the tonic to straddle the complexity of the spirit. Also great with orange juice and ice+wedge of orange.
