Craft Spotlight Collection: The Mahia Mojito

A version of the Mahia Mojito was served for decades in the bars and cafes of Casablanca. For those who love movies, the proper toast before you take that first sip is, "Here's lookin' at you, kid."

Ingredients

1.5 oz Mahia Fig Spirit
.5 oz simple syrup
.5 oz freshly squeezed lime juice
2 oz club soda
10 mint leaves
3 lime wheels

Method

Add mint leaves and simply syrup to an empty cocktail shaker.  Gently press on the leaves to express the oils, but don't mash them, as this will leave you with an overly bitter taste. Add ice, Mahia Fig Spirit, and lime juice. Shake until well-chilled, then strain into a tall glass filled with fresh ice. Top with club soda, and garnish with a lime wheel and a fresh sprig of mint.
