How To Make Rum Cream Cold Foam: The Bridgetown Cafe Cocktail

Rum Cream Cold Foam Cocktails

Now here's a rich and tasty number with an easy-to-make method that will surprise you!

This recipe features two different spirits produced at Foursquare Rum Distillery. One of which you can use to make rum cream cold foam, a delicious way to add flavor and texture to favorite cocktails.

Among rum fanatics, Foursquare is a name that carries a lot of weight. The annual limited edition releases from the Exceptional Cask Series are the holy grail for a lot of rum collectors.

But the Barbados distillery also produce a wide variety of other spirits that share the same ethos of excellent, integrity, and craft that make the Exceptional Cask Series so remarkable.  And bonus -- these are a lot easier to come by! 

This Brandon Cummins recipe features two of these spirits: Foursquare Crisma Barbados Rum Liqueur and R.L. Seale's Finest Barbados 12 Year Rum and a famous tiki flavor full of island spices in John D. Taylor's Velvet Falernum. Read on for the rum cream cold foam technique!

The Bridgetown Cafe Cocktail

Rum cream is similar to other cream-based liqueurs, but here it uses Foursquare Distillery Rum as its foundation. Borrowing from the coffee world, where cold foams are a popular prep technique to make excellent, elevated drinks, here we use the same method with Crisma Rum Cream as the starting point.  Just delicious!

Ingredients

1.5 oz R.L. Seale's 12 Year Aged Barbados Rum⁠
.75 oz John D. Taylor's Velvet Falernum⁠, plus additiona to make the cold foam
1 oz Foursquare Crisma Rum Cream⁠, plus additional to make the cold foam
4 oz Cold Brew Coffee⁠⁠

Method

Combine all ingredients in a shaker tin, add ice and shake vigorously. Double-strain into a double-old fashioned glass. Top with Crisma Rum Cream Cold Foam, recipe follows.

⁠Crisma Rum Cream Cold Foam

Take 4 parts Crisma (preferably chilled from the refrigerator) and 1 part John D. Taylor's Velvet Falernum. Combine in a french press, or an immersion blender safe mixing vessel. Press vigorously until the contents double in volume, or blend until you have created gentle peaks. Using a spoon, dollop the Crisma Foam onto your cocktail & enjoy!⁠
