Let’s start with the star: Mahia Fig Spirit. Crafted by Nahmias et Fils Distillery in New York’s Hudson River Valley, Mahia is like an aromatic hug from a fig tree, with whispers of anise and stone fruits.
Next up, the troublemaker: absinthe. This green fairy adds just the right amount of herbal mischief to the mix, enhancing the Mahia’s complexity without throwing a wild party. Just a touch, enough to keep things interesting.
Enter Liber & Co's orgeat syrup par excellence. This sweet almond nectar brings a creamy, nutty flair that’s like a smooth jazz note in our symphony of flavors. It’s the perfect counterbalance to the potency of the absinthe, marrying well with Mahia’s sweetness.
To give our cocktail that refreshing lift, we top off with chilled soda water and serve over ice in a tall Collins glass. Don’t forget the final flourish: a fresh raspberry garnish. It’s like the cherry on top but classier. And red. Because raspberries.

Ingredients

Directions
Combine Mahia, absinthe, and orgeat in a collins glass filled with ice and stir.
Top off with soda water.
Garnish with a fresh raspberry. No raspberry? Use a fragrant herb of your choice, like mint.

I was a little dubious at first because I doubted the fig undertones of the Mahia could hold up to the intensity of the absinthe. But I was very surprised, it really does come through. A really refreshing and balanced drink!
