The Watermelon Mint Mojito: Enjoy Summer Year-Round
Watermelon is one of summer's quintessential flavors. Here it meets the classic mojito for a drink that brings that summer taste, no matter the time of year.
Instead of the usual white rums we all know (and love!), here we recommend one with a full-bodied taste and lots of flavor. Plantation 3 Star is made from a blend of Barbados, Jamaica, and Trinidad rums. It brings all that rich brown sugar, caramel goodness, and ends on a grassy, herbal note, which complements the watermelon in a delicious and unique way.
Ingredients
1/2 c. watermelon pieces
10 mint leaves
.5 oz of lime juice (more to taste)
.5 oz simple syrup*
1.5 oz white rum, we recommend Plantation 3 Star
Method
Gently muddle watermelon, mint & lime juice in a cocktail shaker. The goal here is to break down the watermelon and release the oils from the mint, but not to crush the mint until it becomes bitter.
Add ice, rum and simple syrup to the shaker. Then shake until cold. Double strain into an ice-filled glass, top with additional crushed ice, and garnish with a wedge of watermelon and a mint sprig.
*Simple syrup is optional, depending on the sweetness of your melon and how much lime juice you prefer
