Copalli White Rum is a Rum from the Copalli Rum brand.

What is Copalli White Rum?

Copalli White Rum stands out as a single-estate organic rum crafted in the heart of the Belizean rainforest. What's particularly intriguing is that it's made using only three ingredients: heirloom sugar cane, rainwater collected from the canopy of the surrounding jungle, and yeast – making it one of the purest expressions of rum available.

Why do we love Copalli White Rum?

Copalli White Rum stands out for its eco-conscious production and pure Belizean origins. Made from just three ingredients—organic sugar cane, rainwater, and yeast—and distilled in a zero-impact facility powered by biomass, this rum offers a clean, vibrant flavor profile that reflects its pristine jungle surroundings.

How do you drink Copalli White Rum?

Copalli White Rum shines in tropical-style cocktails, where its clean, grassy notes can truly sing, but it's equally at home sipped neat or on the rocks for those who appreciate its nuanced flavors. This versatile spirit is perfect for warm weather sipping, pairing beautifully with fresh seafood dishes or spicy Caribbean cuisine that complements its subtle sweetness and hints of vanilla.

Nose: Clean sugar cane aromas with hints of fresh grass and subtle tropical fruit notes. There's a light vanilla sweetness and a touch of white pepper spice.

Palate: Smooth and crisp with a light body. Flavors of fresh sugar cane juice, green banana, and a hint of coconut. Subtle grassy notes and a gentle warmth from the alcohol.

Finish: Medium length with lingering sweetness. Clean and refreshing with a slight peppery tingle. Faint hints of citrus and minerals on the fade.

Copalli White Rum is crafted using only three ingredients: organic sugar cane, rainwater collected from the canopy of the Belizean rainforest, and yeast. What sets this rum apart is its commitment to sustainability - the distillery operates on renewable energy and uses leftover sugar cane fibers as fuel, while excess vinasse (a byproduct of distillation) is used as fertilizer for the cane fields, creating a closed-loop production process.

  • Copalli White Rum is produced using only three ingredients: organic sugar cane, rainwater collected from the canopy of the Belizean rainforest, and yeast. This minimalist approach results in a pure, clean-tasting rum that truly captures the essence of its tropical origins.
  • The distillery that produces Copalli Rum operates on a zero-impact basis, utilizing solar power and biomass to fuel its operations. Even more impressive, they've implemented a closed-loop system where leftover sugar cane fibers are used to power the boiler, and the ash is then used as fertilizer for the next crop of sugar cane.
  • Copalli Rum's commitment to sustainability extends beyond its production methods. The distillery is part of a 22,000-acre nature preserve in Belize, which helps protect the habitat of over 200 species of birds and numerous endangered animals, including jaguars and howler monkeys.

A very nice rum with a light finish

I did not have high expectations for this rum but have been pleasently surprised. It is quite lite on the "funky" flavor I expected and is okay sipping, but a bit ethanol forward for that I believe. It makes an adequate old fashioned but (though I don't usually smoke a rum old fashioned) it takes cherry smoke quite nicely and ends up with a very deep and complex flavor that was not there originally. I have no intention of sipping this in the future, but...

Where this rum REALLY shines is in a classic daquiri. The lime and simple combined with this particular rum is exquisite and in my top three right now for this cocktail.

      Hogo

It's a rum with a lot of hogo. Great as long as you use it in recipes where that is advantageous.

I'm still looking for the best use of this agricole-style rum

Thanks to a recent Shaker & Spoon livestream where they featured Copalli rums, I decided to give this bottle a try. I enjoy this cane juice style of rum. It's like a softer version of a Martinique rhum agricole. There's a big burst of banana on the nose, and a fair amount of ethanol, too. There are notes of grassy sugar cane, but it's in the background. There's surprisingly little burn on the palate, given the nose, and less tropical fruit than I would expect. It's more vanilla with some fresh grass. The finish is sweet, especially given that there's no sugar added. The mouth feel is soft.

If you told me this was a blend of cane juice and molasses rums, I would have believed you. I believe this is the least funky cane juice rum I've experienced. That isn't a bad thing, but it's unexpected given how Copalli is produced.

This reminds me of Huihui from Kuleana, but a bit diluted in comparison. It seems like it was likely made for cocktails. I tried it in a Ti' Punch, but it didn't hold up to the sugar and lime. I actually preferred it neat rather than in a Ti' Punch. That inspired me to try it in a rum old fashioned—something I wouldn't typically think to do with a young rum like this. I used a barspoon of simple syrup, a dash of Ms. Betters Bitters Banana Bergamot Bitters and a dash of El Guapo Cuban Bitters. Those bitters did a nice job of enhancing the flavors of the rum and adding depth.

There's a bonus recipe using this bottle in the Born to Rum: Jamaica box from Shaker…
