Tasting Notes Banana bread, with notes of chocolate, cinnamon bark, and coffee. Nuances of pepper remain, but the cachaça’s time spent in wood changes its spiciness from fresh red pepper to toasty black pepper.
Production Notes Novo Fogo's barrel-aged cachaça is made from certified organic sugarcane that is crushed within 24 hours of harvest at the distillery's estate in Morretes, Paraná. It is fermented over 18 hours, distilled once in copper pot stills and aged for 2 - 3 years in Four Roses bourbon barrels that have been taken apart, sanded and lightly re-toasted. This minimal processing happens in tiny batches, according to traditional methods, with human hands. There are no chemicals involved in growing the sugarcane nor its distillation into
cachaça, only time, care, and intention. Fun fact: The distillery is built into a hill so that gravity naturally lets the cachaça travel from fermentation to distillation to barreling to bottling.
Terroir The distillery is located in the heart of Brazil's coastal rainforest, designated by UNESCO as the world's second largest Biosphere Reserve for its animal and plant diversity. The sugarcane for the cachaça is grown in the fertile soil of this amazing region, nurtured by the fresh and sweet mountain air and the dynamic coastal climate.  With no pollution, it's possibly the cleanest and purest tasting sugarcane in the world.
