  • 12.00 fresh Mint leaves
  • 0.75 fl oz Freshly squeezed lime juice
  • 0.25 fl oz Giffard Sugar Cane Syrup (Sirop Sucre de Canne)

Directions

  • Lightly muddle mint in base of Collins glass to bruise
  • Add rum, lime juice and sugar
  • Half fill glass with crushed ice
  • Churn with bar spoon
  • Fill glass with more crushed ice
  • Churn again with bar spoon
  • Top with champagne
  • Stir gently
  • Garnish with mint sprig
  • Serve with straws
