Cocktail Description

The Gin Mint Collins takes the classic Collins template and gives it a decidedly herbal, garden-fresh personality that feels like springtime in a glass.

This refreshing long drink starts with muddled mint leaves that get shaken with Beefeater gin, crème de menthe, lime juice, and cane syrup before being topped with sparkling soda water. The result tastes bright and cooling, with layers of mint that range from fresh and grassy to sweet and smooth, all balanced by tart lime and the botanical backbone of London Dry gin. It's an excellent choice for warm afternoons, weekend brunch gatherings, or anytime you want something tall, cold, and supremely sippable. Making one requires just basic bar skills—if you can muddle herbs gently without pulverizing them and shake a cocktail, you're golden. The Collins glass keeps everything frosty and approachable, while that mint sprig garnish adds an aromatic bonus with every sip. Food-wise, this pairs beautifully with light fare like grilled shrimp, fresh salads with citrus vinaigrette, Vietnamese spring rolls, or even a simple cheese and charcuterie board where the minty freshness can cleanse your palate between bites.
