Recipe from How to Drink episode: Best Drinks for Spring
1.5 oz infused gin (Greg uses Fords Gin)
1 oz Simple syrup
.75 oz Lemon juice
1 egg white
Start by infusing earl grey tea into some London dry gin. Greg uses Twinings loose leaf and Ford's Gin. Add 4 tablespoons of tea to a 750ml. bottle. Put the tea in, shake it up and wait two hours. After that strain and filter it to get as much of the tea particulate out as possible and keep the infused gin indefinitely.
Add sugar to the rim of a coupe. Add infused gin, Simple syrup, lemon juice and an egg white to a shaker. Dry shake. Add ice and shake. Strain into coupe and garnish with twist of lemon peel.
