Ingredients

.5 oz Smith and Cross Jamaica Rum
.5 oz El Dorado 5 Year Rum
.5 oz Pierre Ferrand Dry Curaçao
1 oz lime juice 
.75 oz orgeat (check out Liber & Co. if you don't want to make your own!)
.25 oz simple syrup (optional) 

 

Method

In a shaker add all the rums, curaçao, lime juice, orgeat and simple syrup (optional). Add ice and shake. Half open pour into a mai tai glass. Garnish with a lime and sprig of mint.

Recipe from How to Drink episode: A History of Tiki: Don the Beachcomber

Ingredients:

1/2 ounce fresh lime juice
1/2 ounce honey syrup
1/4 cup fresh pineapple chunks
10 to 12 leaves fresh mint
1/2 ounce peach brandy
1 ounce Puerto Rican rum - Bacardi Gold
Mint sprig for garnish
 

Method:

Put 3/4 cup crushed ice in a blender. Add the lime and then the honey syrup, followed by the fresh pineapple and the mint leaves. Add the brandy and the rum, and blend it up until it's nice and frothy. 

Pour into a coupe and garnish with a mint sprig.

Ingredients:

0.5 oz freshly squeezed orange juice
0.5 oz freshly squeezed lime juice
0.5 oz Myer's Dark Rum
0.25 oz Fassionola syrup
1 dash grenadine
Lime wheel & cinnamon stick  
 

Method:

Fill a glass with crushed ice. Pour in the orange and lime juice, followed by the Falernum. Then the Fassionola syrup, and a dash of grenadine (for the color.) Follow that with a dash of both Absinthe and Angostura bitters. Finally, add the overproof Demerara rum and the dark Jamaican rum. Swizzle in the glass until the color is uniform. Top off with ice. Garnish with a lime wheel and a cinnamon stick. The cinnamon is key!

Ingredients:

1 oz Bacardi Superior
0.5 oz El Dorado 8
1 oz fresh orange juice
0.5 oz fresh lime juice
0.5 oz honey simple syrup
1/2 teaspoon ginger syrup
1 oz club soda 
 

Method:

Add the citrus (orange and lime juice) to you shaker. Then the honey syrup and ginger syrup. Next the Falernum, then all three rums.  Finally, a couple dashes of Angostura Bitters. Add a generous amount of crushed ice and shake. Open pour into a glass. Garnish with a sprig of fresh mint.  Add a splash of club soda (carbonated water) if desired and enjoy!

Tonka bean
 

Method:

In a mixing glass, add 1 bar spoon of Bénédictine and .5oz of honey syrup. Shave a small amount of Tonka bean into a glass. Add 1oz of Plantation and 1oz of Appleton Estate. Crack ice, stir and strain into glass.

Ingredients:

1 oz lemon juice
.5 oz simple syrup
Heaping spoonful of Matcha Powder
1 egg white
 

Method:

Dry shake all ingredients. Add ice and shake again. Strain into coupe or sour glass. Garnish with dots of bitters. (Make a skull and cross bones if you dare)
