Autumn is back, and with it, some of our favorite flavors.
This marriage of Absinthe, Pear Eau de Vie, and Bitters is a perfect example.
Fresh pears, bright citrus, baking spices, and of course the rich character of Absinthe - Fennel, Herbs, Mint, and Star Anise.

Ingredients

.5 oz Absinthe + a barspoon for the rinse

1.5 oz Pear Liqueur

Angostura bitters
-
1 oz fresh-squeezed lemon juice

.75 oz of simple syrup

1 egg white
Directions
Rinse your coupe glass with a barspoon of absinthe. Discard the exceess.
Crack a fresh egg white into your cocktail shaker.
Add all the remaining ingredients except the bitters.
Seal tightly and shake without ice.
Add ice, seal again, and shake hard again.
Double strain into your Absinthe rinsed glass.
Garnish with bitters and a star anise to taste.
