How to Make Dragon Fruit Syrup

Dragon fruit syrup can be hard to come by, so here's a pretty easy way to make it at home!
1 cup diced dragon fruit
1 cup water
1 cup sugar
Put all ingredients into a saucepan and bring to a boil.
Once it reaches a boil, let it simmer for 15 minutes. Mixture should thicken and dragon fruit should soften.
Let cool partially, then strain into a bowl. Be sure to press down on the fruit to extract as much juice as possible.
Place into a sterilized jar or container. Syrup will continue to thicken as it cools. Keep refrigerated.
