What is Baldoria Bitter Vermouth?

Baldoria Bitter Vermouth stands out in the crowded vermouth market with its unique blend of 30 botanicals, including rare ingredients like myrrh and propolis. This Italian gem is not only a versatile cocktail ingredient but also holds the distinction of being the world's first vermouth specifically crafted to be enjoyed on its own over ice, making it a true pioneer in the aperitivo category.

Why do we love Baldoria Bitter Vermouth?

Cocktail enthusiasts will adore Baldoria Bitter Vermouth for its innovative blend of traditional Italian vermouth and amaro bitters, creating a versatile ingredient that adds complexity to drinks with just a single pour. This unique hybrid spirit, crafted in Turin, Italy, features a proprietary blend of 30 botanicals, including gentian, rhubarb, and cinchona bark, resulting in a perfectly balanced bitter-sweet profile that can elevate both classic and modern cocktails.

How do you drink Baldoria Bitter Vermouth?

Baldoria Bitter Vermouth shines in a variety of cocktail applications, particularly in stirred drinks that highlight its complex botanical profile, but it's equally delightful sipped neat or over ice as an aperitif. Its robust bitterness and herbal notes make it a perfect companion for warm summer evenings, pairing beautifully with salty snacks like olives, nuts, or cured meats to stimulate the appetite before a meal.

Nose: Bright citrus notes of orange and lemon zest, followed by herbal aromas of wormwood and gentian. Hints of rhubarb and cinnamon add complexity.

Palate: A balance of bitter and sweet flavors. Initial sweetness from red fruits like cherries and strawberries, quickly followed by the characteristic bitterness of gentian and wormwood. Spicy notes of cinnamon and clove emerge, along with a touch of vanilla.

Finish: Long and pleasantly bitter. The citrus and herbal notes linger, with a subtle sweetness that gradually fades. A slight warmth from the alcohol content remains, accompanied by a drying sensation on the tongue.

Baldoria Bitter Vermouth is crafted using a unique "double infusion" method, where the base wine is first infused with botanicals, then fortified and infused again with a different blend of herbs and spices. This two-step process creates a complex, layered flavor profile that sets Baldoria apart from traditional vermouths, resulting in a bolder, more intense bitter character.

  • Baldoria Bitter Vermouth is actually a blend of three distinct Italian aperitifs: vermouth, amaro, and red bitter liqueur. This unique combination creates a complex flavor profile that's both familiar and innovative.
  • The creators of Baldoria collaborated with legendary bartender Simone Caporale to develop the recipe, drawing inspiration from his grandmother's homemade vermouth. This personal touch adds a layer of authenticity and tradition to this modern spirit.
  • Unlike many vermouths that use artificial coloring, Baldoria gets its rich ruby-red hue naturally from an infusion of hibiscus flowers. This not only enhances the visual appeal but also contributes subtle floral notes to the overall taste.

Makes an intriguing take on a Negroni

I created the Baldoria Orange Negroni recommended in this product description. I used 1 ounce Baldoria Orange Wine Vermouth, 1 ounce, Baldoria Bitter Vermouth, and 1 ounce Bulldog London Dry Gin. I stirred this over a big block of ice, then expressed an orange peel over the cocktail. This produced a lighter, more herbal take on a Negroni than the traditional cocktail. This Negroni reminds me a bit of the White Negroni. It's possible that gentian is being used as the bittering agent in the bitter vermouth.

By itself, the bitter vermouth is lighter and more herbaceous than Campari. It's softer, and the wine base comes through. Trying both the bitter and orange wine vermouths on their own, I prefer the orange wine vermouth. It's a rounder, more balanced flavor with plenty of herbaceous notes to keep it interesting.

I added 0.5 ounce of CioCiaro Amaro to my Baldoria Orange Negroni and immediately preferred this variation. It needed a bit more backbone, as the bitter vermouth isn't as punchy nor as sweet as the Campari that it replaces. That little bit of CioCiaro made a big difference, and I would gladly craft this combination of ingredients again!
