The Art of the Stirred Cocktail
Manhattans are stirred, not shaken, and the technique matters more than people think. Combine ingredients in a mixing glass with ice, insert your barspoon, and stir in smooth circles for 25-30 seconds. You're doing two things: chilling the drink and adding a specific amount of dilution that opens up the flavors and rounds out the spirit's edges.
Under-stirring gives you a boozy, harsh drink. Over-stirring gives you a watery, flat one. Around 30 seconds is the sweet spot for most spirit-forward cocktails. Strain through a Hawthorne strainer into a chilled coupe or Nick & Nora glass, and serve immediately. These drinks don't wait well — they warm up fast, and a warm Manhattan is a sad Manhattan.
